This leprechaun bait is super simple and a yummy treat for St. Patrick’s Day or really any time and comes together quickly. The sweet and salty treat that won’t get you pinched.

My kids are teens but even still they have come to expect some sort of antics and most definitely treats every year on St. Patrick’s Day. Gone are the days when we set traps for a leprechaun but we still love to celebrate and be a little silly. 

Usually that means a morning of finding leprechaun pee in the toilet (a few drops of food coloring does the trick), gold coins, green milk, green donuts and Lucky Charms. And this year it will include Leprechaun Bait. 

What I love about this treat – other than that it is easy (hello…no bake) and quick – is that the star is popcorn, which is our universal household fave. I also like that I can pop it in a baggie and we can nosh throughout the day or take it on the go. Kids can easily help, too.

What You’ll Need 

(Click here for everything you need to make these.)

1 bag microwave butter popcorn, popped (about 6 cups)

1 bag of mini marshmallows (10 oz)

1 bag of Lucky Charms marshmallows (7 oz)

Green and yellow M&M’s (I used candies from a full bag of M&M’s)

Vanilla almond bark or white chocolate (8 oz)

Sprinkles (I went with rainbow, green and yellow)

Gold covered chocolate coins

Let’s Make It

Melt chocolate bark according to package directions. Set aside.

To a large bowl, add popped popcorn, marshmallows and M&M’s. Gently mix.

Add about half of chocolate to bowl, stirring gently to distribute.

Spread mixture over sheet pan

Add remaining chocolate using a zigzag motion with a spoon so it doesn’t clump in one place. 

Add sprinkles

Gently combine with hands or a spoon

Allow to set for about 45 minutes

Break into small pieces and serve (or store)

Tips

  • Line the baking sheet with parchment paper or foil for easier cleanup.
  • Once the chocolate is melted, work quickly so the sprinkles will stick.
  • Add what you love – cheerios, chex, pretzels – there are so many options.

How to Store

  • Place in an airtight container and keep on countertop for up to a week
  • You can also freeze up to 3 months (thaw overnight on counter)

This snack is addictive. I hope it will become a fan favorite in your household. Who knows…you might even catch a leprechaun.
