Thanksgiving Egg Rolls
Thanksgiving Egg Rolls are a great way to switch up Thanksgiving leftovers and repurpose them for an easy dinner. Take all your favorites from Thanksgiving dinner and create a quick wonder that will become a holiday tradition.

- 1 pack egg roll wrappers
- ½ cup cold collard greens (drained)
- ½ cup cold dressing
- ½ cup cold mashed potatoes
- ½ cup shredded cold turkey
- ¼ cup cranberry sauce
- 1 cup warmed gravy
- Cooking spray
Place your egg roll wrapper flat on a clean surface.
For each egg roll, add two tablespoons of greens, dressing, mashed potatoes and turkey to the wrapper.
Top with one tablespoon of cranberry sauce.
Dab your finger in water and run along the sides of the egg roll wrapper.
Place the egg roll wrapper so it looks like a diamond. Fold the sides in and then the top. Roll tightly.
Spray the basket with cooking spray and place each egg roll seam side down.
Cook for 7 minutes at 350 degrees.
Let rest for 5 minutes.
Serve with warm gravy.
