Thanksgiving Egg Rolls

Thanksgiving Egg Rolls are a great way to switch up Thanksgiving leftovers and repurpose them for an easy dinner. Take all your favorites from Thanksgiving dinner and create a quick wonder that will become a holiday tradition.

Ingredients
  

  • 1 pack egg roll wrappers
  • ½ cup cold collard greens (drained)
  • ½ cup cold dressing
  • ½ cup cold mashed potatoes
  • ½ cup shredded cold turkey
  • ¼ cup cranberry sauce
  • 1 cup warmed gravy
  • Cooking spray

Instructions
 

  • Place your egg roll wrapper flat on a clean surface.
  • For each egg roll, add two tablespoons of greens, dressing, mashed potatoes and turkey to the wrapper.
  • Top with one tablespoon of cranberry sauce.
  • Dab your finger in water and run along the sides of the egg roll wrapper.
  • Place the egg roll wrapper so it looks like a diamond. Fold the sides in and then the top. Roll tightly.
  • Spray the basket with cooking spray and place each egg roll seam side down.
  • Cook for 7 minutes at 350 degrees.
  • Let rest for 5 minutes.
  • Serve with warm gravy.
